Abelskivers

As long as I've been a part of the Mansfield family (and I don't know how long before that), they have had a tradition of making Abelskivers for breakfast every General Conference Sunday. It is such a fun tradition. We all look forward to General Conference. Not only for the spiritual feast, but also for the breakfast feast. Mom used to be the only cook, but as our family continues to grow, Wyatt has been added to the cooking staff. There has always been kind of a contest to see who can eat the most abelskivers. For a long time Wyatt held the record at 23, but since Mike and Kevin have been in the family, the contest is between the two of them. I'm not sure who currently holds the record, but it is like 34 or something. Nobody else even wants to try to go there. Kamryn competed with Megan last year and won, eating 15 abelskivers. He's pretty proud of his own record. I on the other hand would rather enjoy my breakfast; and I am perfectly content eating only 7 or 8.

oh im so glad you posted about this and the pics, such a neat family tradition and memory!! oh and hurry and move up here and have abelskivers at your house and invite us LOL!

So that is what they look like. We've heard about them for years and never seen them. What a fun tradition and what cute kids!!

I have zero idea what those are..... but I gained 5 pounds looking at them! We should have a party and you should bring them! ;)

So that is so funny that your family has a tradition about these things too. Spencer's family does them every Christmas morning at his grandma & grandpa Lloyd's house. Do you put applesauce in the middle or just make them plain?
